Contrail is a minimal theme based on Tobias Bernard's minimal GTK theme mockup, found here: http://tobias.bluestain.net/floss/minimal-gtk-theme/
Try the Contrail Metacity theme, too! (http://gnome-look.org/content/show.php?content=152183 - works with Mutter)
Also, I recommend the Flat Studio GTK theme, based on the same mockup that Contrail was. http://gnome-look.org/content/show.php/FlatStudio?content=154296

Known bugs:
-When using the Activities hot-corner, it often stays in the hover state when switching back to the desktop. This is a problem with GNOME-Shell itself.

One thing, though. The buttons on the panel icons for turning stuff on/off are hard to see when they're highlighted. Maybe some more contrast would be nice unless that the intention?
