If anyone has a suggestion as how to possibly bold the date rather than bracketing it, I would greatly appreciate the info.

Using bash commands I don't see any way to do what you ask. Everthing is interpreted in ASCII using that method.
Now, if you want to get a little fancy and do some work, you could turn this into python instead of just the .theme file. That would allow you to use conventions such as createRichText() which allows formatting similar to html. That way you could define what text is bolded by using:
<B> </B>.
