OpenOffice switch to high contrat mode based on your current theme background color intensity (in this mode background colors set in scalc are ignored and the high contrast icons are used). Officially there is an option to desactivate this behaviour (in Tools->Option->Accessibility) but it actually does not take it into account (probably not yet implemented). I understand your frustration, one way is too call OpenOffice application like:
OOO_FORCE_DESKTOP=none soffice
for example, making it not use gtk. It is a bit ugly but that's the only workaround I know. Hopefully the accessibility option will be soon fixed in OO. - Nov 26 2006

One thing I wonder, where did you find these icons for the gnome panel (like the green squared firefox icons) ?
