Hi, @pesgo, sorry for the delay in replying.

First, have you tried installing Latte by cloning the repository and then compiling? I ask because I have recently updated Latte from Github and I have not had any dependency problems, but I have not done installations from AUR with Pamac, I did not know that there were problems with dependencies. Try installing from the Github repository.
I will do some tests because I do my tests on a Manjaro KDE, and if I find the solution I will take the steps, since I do not use Thunderbird and I have not used the Latte Dock Thunderbird Extension.

Second, with the problem of the totally white lauchpad icon, do this: right click on the Dock and then edit, then press the central button to move and edit widgets, you go to the Launchpad icon and a small menu will appear, deactivate the drop icon and that fixes the problem.

Actually the Layout is working very well, those are not errors, at least not with the Layout, I have done tests on different distros with clean installations and everything works fine.
Now, the problem that I see in your screenshot is that you have not put the icons to the widgets: Launchapad Menu, Dito Menu and Latte Sidebar, I have left these icons in the download section. To change the icons you just have to go to the widget and right click and then configure "Latte Sidebar, Ditto Menu", etc, in the menu, when the window appears you just have to left click on the icon and then "choose", look for the folder where you have the icons that I have placed in the download section, then you apply the changes and the icon will appear in the top panel or the Dock.

On the other hand, the themes that are better adapted to work with this Layout I have left in the description, these are: WhiteSur, both for Plasma and for GTK applications, the icons I use are Mkos Big Sur and WhiteSur Icons, but you can use the ones you want, as for the theme I think you should use the indicated ones because they are adapted to have round corners in the Dock, although Latte now has the option to put round corners even in themes that do not have round corners by default, but the theme WhiteSur is best adapted for this Layout, the theme you have used: McMojave LAF, I use it for the mcOS Catalina Layout, which does not use round corners in the Dock and has a classic mcOS look.

Anyway, the Layout is tested and works very well, of course I am very sure that I have reviewed and solved the errors, and as I repeat, you must place the icons on those widgets that I have mentioned and everything will be fine with the Layout, because In your screenshot, all I see is that the icons are missing in the blank spaces and the change must be made by you.

Sorry for the delay in replying, friend, unfortunately I am very busy with some projects that are a priority at the moment and I cannot answer as quickly as I would like.
Well, to add your applications to the Dock use "Kruner", you look for the application and drag and drop the icon in the Dock, you can also launch the application and when the icon appears in the Dock you right click on the icon and then pin to the Dock, in this way you can add the applications to the Dock.
But if what you want is to add Widgets, follow the instructions in the Psyphidotos message, that's the way to add the Widgets.

Well, you see, this layout is intended to be used in KDE, to install it in Ubuntu with Gnome, you have to install too many dependencies of the KDE desktop, you must almost completely install the KDE desktop, and it is not recommended because it could cause your desktop Gnome breaks, so if you want to try it you can use one of the Ubuntu flavors with the KDE desktop, such as: Kubuntu or KDE Neon, so you avoid installing thousands of dependencies that can break your desktop.
