open /skin/classic/global/menu.css (line 170)

change:

.menubar-text {
margin: 0 1px !important;
color: #inherit;
}

to:

.menubar-text {
margin: 0 1px !important;
color: #ffffff;
}

save as menu.css on the desktop, and replace /skin/classic/global/menu.css inside the classic.jar

I did manage to fix the OOo bug but this will introduce even worse bugs.
I have a partial solution for this problem but am not too sure it will please everyone.
By the help with the color schemes support, you can change the OOo menubar fonts to white and you also have to change the windows background to a darker color (gray-black) otherwise you will get white text in white background for the menu style. ( The whole theme will be dark as the second screenshot)
I will update the theme in a few days to support this feature.

You have to set the panel background manually but you will lose the fancy panel style. I told you this is not the best way to fix the bug. I'm working on another approach. - Oct 27 2007

I also hope it will be fixed soon.
Firefox and Thunderbird also have the same bug but there are fixes for them.
I'm not too sure if there is any workaround for OOo to fix this bug.

The only workaround to set up the panel size automatically is to make it no less than 33 pixels. To change the panel size with less than the optimum size you have to edit the gtkrc file. Type in Terminal:
gedit $HOME/.themes/moomex/gtk-2.0/gtkrc

Comment this line under style "panel-moomex"
GtkWidget::focus_padding = 7

I'm very aware of the create launcher bug. In fact if you search for the word "BUG" in gtkrc file and comment that line, the problem will be fixed. However, you have to set up the panel background manually. I'm working on another approach to fix this bug. - Oct 27 2007

This is a bug in gnome-panel not in moomex-theme.
You can try and remove "~/.gconf" (don't forget to backup it first just in case) . This should reset the gnome-panel (and the rest of gnome) settings. It's a drastic way to do it. hope it will help - Oct 20 2007

Did you install gtk2-engines-pixbuf ?
Type in terminal:
sudo apt-get install gtk2-engines-pixbuf.

If the theme still looks wierd, check if you have clearlooks engine.

To solve the problem,

edit the gtkrc file,
moomex => gtk-2.0 => gtkrc
search for the word "BUG" and comment this line
